Effective spring 2001, Clayoquot Wilderness Resorts will be offering Spa Cuisine to guests so inclined. But, instead of developing a single spa menu, Chef May has, in consultation with nutritionists and spa-frequenting guests, decided to work on a one on- one basis which each spa patron to satisfy his or own unique requirements. "If guests can communicate their specific dietary needs to me in advance of their visit, so much the better," says May, "but if not, no problem, I love a challenge."
