Sourcing locally and sustainably was a global food movement sparked by the likes of pioneering homegrown chefs Alice Waters of Chez Panisse in Berkeley, California, and Myrtle Allen of Ballymaloe in County Cork, Ireland, but in Canada, the push came from Vancouver Chef John Bishop, whose namesake restaurant Bishop’s helped put Vancouver on the world culinary map.

John Bishop will be joining our Executive Chef Luca Paola, well-known for his unwavering commitment to ‘fresh, local uncluttered cuisine’, and Executive Sous Chef Jamie Huynh from September 3rd thru 7th for a special five day, four night culinary adventure – the first in a new series of gastro getaways we call Sound Bites.

Working together with farmers, growers, artisanal producers, fishers, foragers, and other suppliers throughout Clayoquot Sound, Chefs Bishop and Paola will design and deliver four consecutive dinners showcasing the very best just-picked, fresh-caught, home-grown seasonal ingredients – prepared to pair perfectly with showcase wines from the critically-acclaimed Road 13 Vineyards in Oliver, British Columbia.

Sound Bites five-day, four-night package prices are inclusive of dock-to-dock floatplane fare from YVR Vancouver, luxury tented accommodation, wilderness activities including horseback riding, kayaking, stand-up paddleboarding, hiking, whale and bear watching, rock climbing, archery and more, plus massage, fishing, all gourmet meals, wine, tastings, seminars, and cooking class. About our Special Guest Hosts

John Bishop, Restaurateur, cookbook author
British born John Bishop, who has been cooking since his early teens, attended hotel school and served his apprenticeship at a private London club. After ten years as chef at a restaurant in Kinsale, County Cork, he came to Canada in 1973, where he continued to pursue his culinary career. In 1985 he launched the restaurant that bears his name. Bishop’s, located in Vancouver, was an immediate success and continues to garner accolades. The fare at Bishop’s is regional, seasonal and organic. In Chef Bishop’s view, it makes sense to showcase the lush bounty of the Pacific Northwest. His exquisite West Side restaurant blends classic and modern flavours with a casual elegance that keeps clients coming back for a truly exceptional dining experience. He has authored four bestselling cookbooks. In 2003, the Queen of England awarded John a Golden Jubilee medal for his service to the community and his hospitality leadership. John more recently was honored to receive the inaugural Governor General of Canada’s “Nation’s Table” award, celebrating the culinary arts. In 2012, John was again recognized with a lifetime achievement Pinnacle Award from Foodservice and Hospitality Magazine for his 40+ years in the industry. 

Joe Luckhurst, General Manager Road 13 Vineyards
Joseph Luckhurst, son of Road 13 proprietors Mick and Pam, worked for Road 13 from Vancouver for several years. In 2012 Joe left Vancouver to throw himself into the everyday operations of the family business and early in 2014 he took the helm as Managing Partner. With a work ethic that is oddly familiar to the rest of the team at Road 13, he seems to have fully embraced Mick’s adage, “owners don’t need days off.”    Road 13 Vineyards is a family owned winery in Oliver, British Columbia. Founded in 2003, Road 13 ranks among the very top of Canadian wineries with wines that express the special character of the South Okanagan. Details

Rates

  • rates shown are per person, based on double occupancy.

Massage Allowance

  • One-hour relaxation massage per-person, included with stays of three or four nights.

Fishing Allowance

  • One half-day in-shore ocean or deep sea fishing adventure per family/group, included with stays of three or four nights.
  • Additional deep sea fishing (in excess of two miles off-shore) excursions are charged a supplemental fee of $500 per person, minimum of two persons.

Children

  • Due to the intimate size and nature of the resort, children must be a minimum of six years of age.
  • Children’s Rates apply to children 12 years of age and under, sharing same tent with parents or assigned, at the discretion of the resort, to one of a limited number of rainforest and sunrise deluxe tents across the boardwalk from ensuite and deluxe tents.  These tents may be assigned as upgrades, or to children, and are priced relative to season, guest age and occupancy levels.

Singles

  • Due to a short resort season and limited accommodations, adult double occupancy is required in all ensuite and deluxe tents during peak season stays.
  • A single occupancy supplement of $600.00 per night applies during shoulder seasons.

Applicable Taxes

  • Environmental Sustainability fee:  3%
  • Provincial Hotel Tax: $16 per tent per day
  • GST (federal): 5%
  • Resort Fee & Gratuity 14%

Baggage

  • Baggage allowance per person on the floatplane is 40lbs (18 kilos).
  • Guests arriving to the resort before or after extended travel can store excess luggage securely at the floatplane terminal.

Booking & Cancellation

Due to a short resort season, a 50% deposit is taken at time of booking, with the balance due 90 days prior to arrival.  If cancellation is received and confirmed 91 days or more prior to arrival, a $500 per person cancellation fee applies.  If cancellation is received 0-90 days prior to arrival then the reservation is 100% non-refundable.

Wilderness Factor

Sometimes, due to weather, floatplane schedules are changed or amended by the operator to suit inclement weather, or include a ground transfer component. Such changes and delays are beyond our control and while we and our floatplane partners do our best to adhere to plans,  sometimes, for the safety of passengers, scheduled flights are cancelled or delayed until such time as pilots receive the all-clear to take off from YVR South Terminal to fly direct to the resort, or other destination on Vancouver Island to be supplemented by ground and/or boat transfer.   Please inquire directly with the resort re policies.
