Philosophy of Modern Natural Cuisine

When Chef May decided to take the helm at Clayoquot Wilderness Resort 10 years ago, he set about creating an identity for his food. Because the resort started out on a floating barge, with a kitchen the size of a pantry station, he knew he needed a unique vision to help it grow.

Chef says the standards set by Vancouver Island farmers can easily compare to the best produce Europe has to offer. Thus, Chef defined his "Modern Natural Cuisine" as a means to pay tribute to his skills, and the incredible array of local ingredients at his fingertips.

"Modern" relates to Chef's adaptation of new cooking styles with old school techniques, while keeping the basics taught to him 25 years ago. "Natural" relates to how the food is prepared allowing the pure, natural flavours to come through in the dish. His "Cuisine" is primarily influenced by locally available ingredients.

Modern Natural cuisine is an easy way to explain his philosophy of clean, simple, fresh food.
